一番亭 拉麵 in Da-an District
IMHO the best Hakata (pork boned soup) ramen in Taipei. I usually get their Dan-Dan Noodles (spicy). I also recommend their green-tea+redbean shaved ice dessert
Pho Hoa in Da-an District
There aren't many Vietnamese Pho places in Taipei, but this place is pretty good. Their dry noodles are pretty tasty too.
老王記牛肉麵 in Jhongjheng District
There isn't even a sign for this place outside, but it's always jam packed with customers because they all know that it's the best beef noodle soup in Taipei
中國牛肉麵 in Da-an District
Their beef soup noodles are served in clay pots, so you know they take their soup very seriously... I usually pick their spicy beef noodle soup
阿宗麵線 in Wanhua District
There are no tables, so unless you're buying to-go you're just gonna have to eat their famous rice-noodles soup while standing. But it's worth it, and cheap too
