This is my list of what I think are the top sushi restaurants in Taipei. This guide will change over time as I discover new and better restaurants or find that restaurants on my list no longer deserve their spot ;-)
吉兆割烹壽司 - Kitcho Sushi in Da-an District
An excellent and very delicious omakase sushi restaurant. Be sure to order the sushi in the picture, it's a very special nigiri made with o-toro, chu-toro, and uni (They don't usually offer it, so you have to know to ask for it to get it) The chef-owner comes from 高玉, a famous sushi restaurant in Taipei
牛壽司 in Jhongshan District
A great sushi bar, but you'll have to go with someone who's a regular there to get their best and freshest
澄江創意懷石料理 in Da-an District
I like the simple and modern decor at this Japanese restaurant. They have several rooms if you need, and also a sushi bar if you just want sushi
鮨小馬 in Songshan District
They serve only the tastiest and freshest at this intimate sushi bar. They also have rooms if you require
同壽司 in Sinyi District
Pretty good sushi for the price. I love their Brazil Roll (巴西捲) and soft shell crab roll
明水三井 in Jhongshan District
Probably the best Japanese restaurant in the 大直 area. They have a convenient deli for take-out food. Price is on the high end, but reasonable
高玉日本料理 in Jhongshan District
They serve very fresh fish at this place. This is the original location, a small sushi bar with two tiny rooms. If you need a larger room, go to their 民生東路 (Minsheng East Road) location
本多日本料理 in Songshan District
I like coming to this unassuming yet delicious Japanese restaurant for their lunch set menu. They have pretty good sushi and sashimi as well.

I am surprised that there are so many good Japanese restaurants in Taipei. I got to try some of these restaurants when I visit Taipei next time.
I suggest that ratings of food, decor, service and cost to be included like "ZAGAT" survey.
